Coconut Toffee


1 ½ cup sugar

½ cup water

2 cups unsweetened dessicated coconut

Pinch of ground cardamom or vanilla essence, for white toffee

Drop of pink color & Rose/Raspberry/Strawberry essence, for pink toffee
Mix sugar and water and heat over medium heat till sugar melts. 

Add coconut and cook till it leaves the sides of the vessel.

Cook till it reaches soft ball consistency.  Add essences & color.  Mix and quickly spread the mixture in a greased tray or board and flatten with knife or back of spoon.  Half way through make square or diamond inscisions. Allow to cool and harden.  Takes 30 to 40 minutes start to finish.    When it cools and hardens cut into pieces.

To make two colors, divide the mixture and add the required essence and color before transferring to a tray to set.  Or you may cook the candy in two separate batches.
