Fruit Cake
Ingredients
- 12 eggs
- ½ kg. maida, ½ kg. rawa
- 1 kg. butter, 1 kg. sugar
- 2 tsps. baking powder
- 200 gms. plums
- 200 gms. mixed peel
- 200 gms. cashewnuts
- 200 gms. cherries
- 2 tsp. vanilla essence
- 1 tbsp. lemon juice
- ½ cup milk
Method
- Chop the plums, mixed peel and cherries. Grate the cashewnuts. Dust with a little maida and set aside. (Use maida from the quantity mentioned above, do not use additional flour).
- Take a large mixing bowl and beat the butter and sugar till light and creamy.
- Separate the egg yolks and add to the butter mixture mixing well.
- Put the egg whites in another bowl and beat to a stiff froth.
- Sift the maida and rawa with the baking powder and add alternately with the egg whites, to prevent the mixture curdling.
- Fold in the mixed fruits and grated nuts.
- Add lemon juice, milk and vanilla essence.
- Put into 2 large or 4 medium cake tins.
- Heat oven for 15 minutes on medium heat. When the oven is hot, put the cake tins and bake for 45 minutes or till done.
- To test if the cake is done, insert a knife in the center of the cake and if it comes out clean the cake is ready.
