
Guava Cheese (Perada)
Preparation time : 40 minutes, Cooking time : 45 minutes.
Ingredients
- ½ kg. Guavas – (1 cup pulp)
- 3 cups water
- Pinch of salt
- 1 cup sugar (For every 1 cup of pulp add 1 cup sugar)
- ½ tsp. butter
- ½ lemon (optional)
- Color (Red) or (Brown)
Method
- Wash and cut guavas into small pieces.
- Put into a deep pan along with the water on medium heat.
- Stir cook till the pieces have been reduced to half quantity and are pulpy.
- Remove from heat and sieve the pulp through a fine sieve, so the seeds and skin are removed.
- Mix the pulp, lemon, butter, salt and sugar and cook till it leaves the sides of the pan
- Add the color and put the mixture into a flat tray.
- Flatten the Guava Cheese to about 1/2″ thickness.
- When cool, cut into diamond shapes.
- Store in a container with butter paper between each layer.
