Guava Cheese – Perada

Guava Cheese (Perada)

Preparation time : 40 minutes, Cooking time : 45 minutes.


  • ½ kg. Guavas – (1 cup pulp)
  • 3 cups water
  • Pinch of salt
  • 1 cup sugar (For every 1 cup of pulp add 1 cup sugar)
  • ½ tsp. butter
  • ½ lemon (optional)
  • Color (Red) or (Brown)


  1. Wash and cut guavas into small pieces.
  2. Put into a deep pan along with the water on medium heat.
  3. Stir cook till the pieces have been reduced to half quantity and are pulpy.
  4. Remove from heat and sieve the pulp through a fine sieve, so the seeds and skin are removed.
  5. Mix the pulp, lemon, butter, salt and sugar and cook till it leaves the sides of the pan
  6. Add the color and put the mixture into a flat tray. 
  7. Flatten the Guava Cheese to about 1/2″ thickness.
  8. When cool, cut into diamond shapes.
  9. Store in a container with butter paper between each layer.
