Nankatai Biscuits

  •  1 ½ kg. maida
  • 1 kg. ghee
  • 1 kg. icing sugar
  • 1 ½ tsp. baking powder
  • 2 tsp. vanilla essence


  1. Sieve the flour with the baking powder.
  2. Cream the ghee with the icing sugar.
  3. Then add the maida little by little, mixing well.
  4. Add vanilla essence and knead to a soft dough.
  5. Do not add any water as far as possible.
  6. Form into small balls.  Top with a piece of cherry or red jam
  7. Place on a baking sheet, leaving one inch distance between the biscuits and bake in a moderately hot oven till the underside turns a very light brown, approx. 2o minutes.  Keep the biscuits in the middle of the oven.
  8. At this stage the biscuits will still be soft to the touch but will harden when cool.
