I have made the vegetarian version (but using eggs) as bacon is not available in this part of the world. So this is ideal for vegetarians or ‘Lacto-ovo vegetarians’ as they are so called i.e. vegetarians who eat eggs and dairy products. The non-vegetarian version of this fried rice would be really tasty as the bacon would impart an exceptionally delicious flavor to the fried rice.
New-Year Fried Rice
Ingredients
- 8 to 10 strips bacon (omit bacon if making the veg version)
- 2 cups frozen peas, thawed
- 1 cup chopped green onions and tops
- 8 cups cold, cooked white rice
- 3 eggs, beaten
- 1 cup diced bell pepper
- 4 tbsp. soya sauce, or to taste
- Cook bacon in a wok or large skillet over medium heat until crisp. (If not using bacon, add 2 tbsp. oil) Add green onions, red pepper and peas; stir fry 3 to 5 minutes.
- Add egg and scramble.
- Stir in rice and cook until heated, gently separating the grains.
- Add soy sauce; cook and stir until heated through.
- Serve immediately.

Yes, I was thinking of you, Raoul & Val when I made this, considering your fondness for peas!
You can substitute with green capisum, to add the color or french beans (parboiled).
