New Year Fried Rice



I have made the vegetarian version (but using eggs) as bacon is not available in this part of the world.  So this is ideal for vegetarians or ‘Lacto-ovo vegetarians’ as they are so called i.e. vegetarians who eat eggs and dairy products. The non-vegetarian version of this fried rice would be really tasty as the bacon would impart an exceptionally delicious flavor to the fried rice.

New-Year Fried Rice

  • 8 to 10 strips bacon (omit bacon if making the veg version)
  • 2 cups frozen peas, thawed
  • 1 cup chopped green onions and tops
  • 8 cups cold, cooked white rice
  • 3 eggs, beaten
  • 1 cup diced bell pepper
  • 4 tbsp. soya sauce, or to taste
  1. Cook bacon in a wok or large skillet over medium heat until crisp. (If not using bacon, add 2 tbsp. oil) Add green onions, red pepper and peas; stir fry 3 to 5 minutes.
  2. Add egg and scramble.
  3. Stir in rice and cook until heated, gently separating the grains. 
  4. Add soy sauce; cook and stir until heated through.
  5. Serve immediately.
