Pork Vindaloo
Ingredients
- 1 kg. pork
- Diluted vinegar as required
- 2 tbsp. oil
- 3 tsp salt or to taste
- 1 cup vinegar
- Grind to a paste with vinegar
- 20 small dry red chillies
- ½ tsp. cumin seeds
- 18 flakes garlic
- ½ tsp. turmeric powder
- 5 pepper corns
- ½ tsp. coriander seeds
- 2 cardamoms
- ½” cinnamon
To be chopped
- 1” pc. ginger
- 8 flakes garlic
- 3 chopped green chillies
Method
- Clean and wash pork in diluted vinegar.
- Cut into about 2” pieces.
- Grind the masala in ¼ cup vinegar to a smooth thick paste.
- Mix the ground spices with the remaining vinegar and salt.
- Rub the pork pieces with this mixture and allow to marinate for as long as possible (3 to 12 hours).
- Heat oil. Fry the chopped spices.
- Add the pork pieces along with the marinade. Mix thoroughly and cook on slow fire for about 1 ½ hours or till the pork is tender.
- Serve with rice, bread or sannas.
