Pork vindaloo

Pork Vindaloo

Ingredients

  • 1 kg. pork
  • Diluted vinegar as required
  • 2 tbsp. oil
  • 3 tsp salt or to taste
  • 1 cup vinegar
  • Grind to a paste with vinegar
  • 20 small dry red chillies
  • ½ tsp. cumin seeds
  • 18 flakes garlic
  • ½ tsp. turmeric powder
  • 5 pepper corns
  • ½ tsp. coriander seeds
  • 2 cardamoms
  • ½” cinnamon

To be chopped

  • 1” pc. ginger
  • 8 flakes garlic
  • 3 chopped green chillies

Method

  1. Clean and wash pork in diluted vinegar.
  2. Cut into about 2” pieces.
  3. Grind the masala in ¼ cup vinegar to a smooth thick paste.
  4. Mix the ground spices with the remaining vinegar and salt.
  5. Rub the pork pieces with this mixture and allow to marinate for as long as possible (3 to 12 hours).
  6. Heat oil.  Fry the chopped spices.
  7. Add the pork pieces along with the marinade.  Mix thoroughly and cook on slow fire for about 1 ½ hours or till the pork is tender.
  8. Serve with rice, bread or sannas.
