Cake Toast
Ingredients
- 1.5 cups flour
- ¼ cup sugar
- ½ cup butter
- ½ cup yogurt
- ½ cup milk
- 1 ½ tsp. baking powder
- ¼ tsp baking soda
- ¼ tsp. salt
- 1 tsp. vanilla essence or½ tsp cardamom powder
Method
- Preheat oven to 180o C.
- Grease a loaf pan with little butter and sprinkle with flour to coat or use parchment.
- In a medium bowl sieve flour, baking powder and soda.
- Add salt, whisk the dry ingredients until combined. Set aside.
- Beat butter & sugar until pale and creamy.
- Add yogurt, beat well and add vanilla essence or cardamom powder and incorporate into the mixture.
- Add dry ingredients, mix thoroughly and add milk and mix.
- Pour into the baking pan and tap gently to smoothen and remove any air bubbles.
- Bake on the middle rack for 40 to 45 minutes till golden brown.
- Test with a butter knife or toothpick to check if the centre is done.
- Remove to a rack and cool the cake completely.
- Once cool slice the cake into 1/2 “ thick slices.
- Preheat oven, place the cake slices on a baking tray and bake 20 to 25 mns till the base is light golden brown.
- Turn the slices and bake 15 to 20 mns till brown on the underside.
- Remove and cool completely before storing in airtight container.
