Chaklis

Ingredients

  • 1 cup boiled rice
  • ¼ cup urad dal
  • ¼ to ½ cup boiled rice powder
  • 1 tin coconut milk (or as required)
  • 1 tsp. each sesame cumin seeds
  • 1 tsp.Salt to taste                                                                          

Method

  1. Wash the 1 cup rice and soak in medium hot warm water for minimum one hour.
  2. Wash the urad dal, wipe dry and roast and grind to a fine powder. 
  3. Wash the boiled rice (for powder) and roast lightly and grind to a fine powder. 
  4. Drain the water from the rice and grind with as much coconut milk as required to a smooth paste, keeping it thick.  Do not add water. 
  5. Remove to a plate. 
  6. Add the urad and rice powder, cumin seeds, sesame seeds and salt and mix well and knead to a smooth dough. 
  7. Form into chaklis using the chakli mold and fry in hot oil till crisp and light brown. 
  8. Remove to absorbent paper and store in an airtight container when completely cool.
