
Ingredients
- 1 cup boiled rice
- ¼ cup urad dal
- ¼ to ½ cup boiled rice powder
- 1 tin coconut milk (or as required)
- 1 tsp. each sesame cumin seeds
- 1 tsp.Salt to taste
Method
- Wash the 1 cup rice and soak in medium hot warm water for minimum one hour.
- Wash the urad dal, wipe dry and roast and grind to a fine powder.
- Wash the boiled rice (for powder) and roast lightly and grind to a fine powder.
- Drain the water from the rice and grind with as much coconut milk as required to a smooth paste, keeping it thick. Do not add water.
- Remove to a plate.
- Add the urad and rice powder, cumin seeds, sesame seeds and salt and mix well and knead to a smooth dough.
- Form into chaklis using the chakli mold and fry in hot oil till crisp and light brown.
- Remove to absorbent paper and store in an airtight container when completely cool.
