Corn Canapes
Ingredients
- 20 to 25 Canapes
- 500 gms. canned corn
- 1 tbsp. jalapeno peppers chopped fine
- 1 tbsp. sweet relish
- 1 medium onion chopped (optional)
- 2 tbs. green olives chopped
- 2 tbsp. black olives chopped
- 2 tbsp. tomato ketchup
- 1/2 tsp. black pepper powder
- 1 tbsp. extra virgin olive oil
- Salt to taste
- 1/4 cup coriander or parsley leaves
Method
1 medium Red capsicum, cut into strips (for decoration) or may be chopped and added to the corn mix.
6 to 8 Lettuce leaves
Mix all the ingredients from corn to salt well and set aside.
At time of serving, fill the canapés with the corn mixture. Garnish with coriander leaves and a strip of the red capsicum. Place the canapés on a bed of lettuce (if you so desire) and serve immediately.
