Dahi Palak
Ingredients
- 2 Bunches Palak (Spinach)
- 1 cup yogurt
- 1 tbsp. besan (gram flour)
- 2 dry red chillies
- 1/2 tsp. mustard seeds
- 1/2 tsp. cumin seeds
- 1/4 tsp. turmeric powder
- Salt to taste
- 1 tbsp. Ghee
- Clean spinach and immerse in plenty of salted water to remove dirt, insects, if any. Rinse well and drain.
- Chop spinach into thin ribbons.
- Put the spinach with 1/2 cup water in a vessel and bring to a boil.
- Lower heat and simmer 5 minutes. Add salt.
- Mix the yogurt and gram flour and add to the spinach.
- Cook for 5 minutes till smooth and thick.
- Heat the ghee in another pan.
- Add mustard seeds. When they begin sputtering add the cumin seeds and chillies broken into pieces. Add the turmeric powder and take off the heat.
- Add to the cooked spinach and mix well.
- Serve hot with steamed rice or a any Indian bread (rotis/pooris) of your choice.
P.S.: Skip the water if you like a thicker consistency.
