Ingredients

  • 2 Bunches Palak (Spinach)
  • 1 cup yogurt
  • 1 tbsp. besan (gram flour)
  • 2 dry red chillies
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. cumin seeds
  • 1/4 tsp. turmeric powder
  • Salt to taste
  • 1 tbsp. Ghee
  1. Clean spinach and immerse in plenty of salted water to remove dirt, insects, if any. Rinse well and  drain.
  2. Chop spinach into thin ribbons.
  3. Put the spinach with 1/2 cup water in a vessel and bring to a boil.
  4. Lower heat and simmer 5 minutes. Add salt.
  5. Mix the yogurt and gram flour and add to the spinach.
  6. Cook for 5 minutes till smooth and thick.
  7. Heat the ghee in another pan.
  8. Add mustard seeds.  When they begin sputtering add the cumin seeds and chillies broken into pieces.  Add the turmeric powder and take off the heat.
  9. Add to the cooked spinach and mix well.
  10. Serve hot with steamed rice or a any Indian bread (rotis/pooris) of your choice.

P.S.: Skip the water if you like a thicker consistency.
