Drumstick Leaves & Potato Bhaji


  •  1 Bunch Drumstick Leaves
  • 2 medium potatoes
  • 1 medium onion chopped
  • ¼ tsp. turmeric powder
  • 1 tsp.  Bafat Powder (or any mixed masala powder)
  • 2 tbsp. fresh or dessicated coconut
  • 1/2 tsp. lemon juice (optional)
  • Salt to taste
  • 1 to 2 tbsp. coconut oil


  1. Separate the leaves from the stems of the drumsticks and remove  as much of the stems as possible although the small tender stems may be retained. 
  2. Soak in plenty of water for 10 minutes and rinse thoroughly changing the water atleast twice so that any dust etc. can come off. 
  3. Chop the onion and saute in the oil, when light brown, add the turmeric and bafat masala and salt and toss. 
  4. Add the potatoes, about a ½ to 1 cup of water and cook the potatoes for 10 minutes. 
  5. When potatoes are tender, add the drumstick leaves, mix and cook for 5 minutes. 
  6. Add the coconut and lemon juice and cook further 3 to 5 minutes. 
  7. Serve hot.
