Fig & Orange Salad with Blue Cheese
Ingredients
- 1 bunch rocket
- 4 figs
- 1 orange
- 60 gm. Blue cheese
Dressing
- 1 tbsp. vinegar
- 2 tbs. olive oil
- Clean and wash rocket leaves well and place on a serving plate.
- Cut the figs in quarters.
- Peel the orange and cut the segments into bite size pieces removing the seeds, the pith and the membrane.
- Oranges may be substituted with 100 gms. of white & black grapes.
- Top the rocket leaves with the figs and oranges and the crumbled blue cheese.
- Combine vinegar and oil in a cup or a screw-top jar, shake well and pour over the salad and serve.
