Ingredients

• 1 bunch rocket
• 4 figs
• 1 orange
• 60 gm. Blue cheese

Dressing

• 1 tbsp. vinegar
• 2 tbs. olive oil

1. Clean and wash rocket leaves well and place on a serving plate.
2. Cut the figs in quarters.
3. Peel the orange and cut the segments into bite size pieces removing the seeds, the pith and the membrane.
4. Oranges may be substituted with 100 gms. of white & black grapes.
5. Top the rocket leaves with the figs and oranges and the crumbled blue cheese.
6. Combine vinegar and oil in a cup or a screw-top jar, shake well and pour over the salad and serve.
