Ginger Snaps

Ingredients

  • 2 cups all purpose flour
  • ¾ cup shortening
  • 1 cup sugar + 2 tbsp sugar for coating
  • 1 large egg
  • ¼ cup molasses
  • 2 tsp. baking soda
  • 1 ½ tsp. ground ginger
  • 1 tsp. ground cinnamon
  • ½ tsp. salt

Method

  1. Preheat oven to 180 deg C. 
  2. Cream shortening and 1 cup sugar until light and fluffy. 
  3. Beat in egg and molasses. 
  4. In a separate bowl combine the flour, baking soda, ground ginger, cinnamon and salt. 
  5. Gradually add to creamed mixture and mix well. 
  6. Shape level tbsp. of dough in balls. 
  7. Dip one side in remaining sugar. 
  8. Place 2” apart sugar side up on greased baking sheet or parchment. 
  9. Chill dough for 10 to 15 minutes. 
  10. Bake 12 to 15 minutes or till edges turn brown.
