Ginger Snaps
Ingredients
- 2 cups all purpose flour
- ¾ cup shortening
- 1 cup sugar + 2 tbsp sugar for coating
- 1 large egg
- ¼ cup molasses
- 2 tsp. baking soda
- 1 ½ tsp. ground ginger
- 1 tsp. ground cinnamon
- ½ tsp. salt
Method
- Preheat oven to 180 deg C.
- Cream shortening and 1 cup sugar until light and fluffy.
- Beat in egg and molasses.
- In a separate bowl combine the flour, baking soda, ground ginger, cinnamon and salt.
- Gradually add to creamed mixture and mix well.
- Shape level tbsp. of dough in balls.
- Dip one side in remaining sugar.
- Place 2” apart sugar side up on greased baking sheet or parchment.
- Chill dough for 10 to 15 minutes.
- Bake 12 to 15 minutes or till edges turn brown.
