Jam filled cookies
Ingredients
- 2.5 cups flour
- 1 cup butter
- ¼ tsp salt
- ¼ cup sugar
- 8 oz cream cheese
- 2 tbsp. sour cream
- ½ cup red cherry or strawberry jam or fruit preserve
Method
- Combine flour, sugar, salt.
- Cut in cream cheese and butter and mix well till it resembles bread crumbs.
- Stir in sour cream until dough holds together.
- Knead gently till smooth.
- Wrap dough in plastic and refrigerate for an hour.
- Preheat oven to 180 deg C.
- Take a quarter protion of the dough and on a floured board or work surface, roll out dough into a large circle.
- Cut out some rounds with cookie cutter and pair them with rounds cut with doughnut cutter to make a hole in the centre.
- Place a ½ to 1 tsp of jam on the full round and place the round with the hole over the jam.
- Press edges lightly and place on baking tray with parchment or greased baking tray.
- Bake 15 to 20 minutes till golden brown.
- Remove to a rack and cool.
