Lemon Cookies

  • 5 cups flour
  • 1.5 cups sugar
  • 2 ½ tsp. baking powder
  • 3 eggs
  • 1 cup shortening
  • ¼ cup lemon juice


  1. Heat oven to 180 deg C.
  2. Beat the sugar and shortening and tip in the dry ingredients and eggs and beat well. 
  3. Add the lemon juice and mix.   
  4. Form into 1 to 2 inch dia balls and bake 10 to 12 mns till edges are brown.

To make Easter chicks

Additional ingredients required :

  • Yellow food colour
  • Mini semi-sweet chocolate chips
  • Orange frosting
  • Orange candy slices


  1. Add few drops yellow food colour to the cookie batter. 
  2. For each chick roll 2 balls one smaller (for the head) than the other (body) and press lightly on the baking parchment with the balls just touching each other. 
  3. Bake 10 to 12 mns.till edges are brown. 
  4. While still warm press two chocolate chips for the eyes.
  5. When  completely cool pipe frosting to form legs on the bottom of the cookie.
  6. Cut the ¼” of the edge of the orange slice to form a beak.
  7. With a tiny bit of frosting glue the beak under the eyes.
  8. If orange slices are not available use the orange frosting to pipe a triangle for the  beak.
