LITE-UP your morning Muffins

These muffins are packed with the nutrition of flax seeds, dates, fruit, walnuts, oats for a healthy start to your day!


1 ½  cup whole wheat flour

1 cup regular oats

¾ cup packed brown sugar

1 tbsp. wheat bran

2 tsps. Baking soda

¼ tsp. salt

1 cup plain fat-free yogurt

1 cup mashed ripe banana, about 3

2 large eggs

1 cup chopped pitted dates

¾ cup chopped walnuts

½ cup chopped dried pineapple (or canned, well drained)

2 tbsp. ground flax seeds (about 2 tbsp. whole to sprinkle)

Preheat oven to 200 deg C.

Place 18 muffin cups liners in muffin pan and coat liners with cooking spray, if desired.

Combine flours and next 5 ingredients through salt in a large bowl; stir with a whisk.  Make a well in centre of mixture.  Combine yogurt, banana and egg; add to flour mixture, stirring just until moist.  Fold in dates, walnuts and pineapple.

Spoon batter into prepared muffin cups.  Sprinkle evenly with flaxseed. Bake for 20 minutes.  To test, insert a toothpick and it should be dry.

Remove muffins from pan and leave to cool. Serve with yogurt or cottage cheese and fruit for a complete breakfast.

Dates maybe substituted for apricots or raisins. Contributes plenty of fibre and nutrition.
