Mexican Rice
Ingredients
For Rice –
- 1 cup Rice (uncooked)
- 1 Onion, chopped
- 3 Cloves garlic crushed
- 1 tbsp. Ghee
- Salt to taste
- 2 cups water
For Vegetables –
- 2 large onions, sliced
- 1 cup shredded cabbage
- 1 Capsicum, sliced
- 1 Large Tomato, chopped
- 2 tsps. Soya Sauce
- 1 tsp. Chilli powder
- 6 tbsp. Oil
- Salt to taste
- Heat ghee in a vessel & fry the chopped onion till soft.
- Add the crushed garlic and fry for a minute.
- Add rice, water and salt.
- Bring to a boil, cover, reduce heat and cook on low flame till rice is cooked and water is fully absorbed.
- Meanwhile, as the rice is cooking, in a separate vessel, heat the oil and fry the sliced onions till golden brown in color.
- Remove the onions and set aside.
- In the same oil fry the cabbage for 2 minutes. Remove and set aside.
- Then add the capsicum to the oil and fry for 1 minute.
- To the capsicum add the tomato, soya sauce, chilli powder and salt.
- Add the fried onions, cabbage and rice and mix well.
- Serve hot.
