Mexican Rice

Ingredients

For Rice –

  • 1 cup Rice (uncooked)
  • 1 Onion, chopped
  • 3 Cloves garlic crushed
  • 1 tbsp. Ghee
  • Salt to taste
  • 2 cups water

For Vegetables –

  • 2 large onions, sliced
  • 1 cup shredded cabbage
  • 1 Capsicum, sliced
  • 1 Large Tomato, chopped
  • 2 tsps. Soya Sauce
  • 1 tsp. Chilli powder
  • 6 tbsp. Oil
  • Salt to taste
  1. Heat ghee in a vessel & fry the chopped onion till soft.
  2. Add the crushed garlic and fry for a minute.
  3. Add rice, water and salt.
  4. Bring to a boil, cover, reduce heat and cook on low flame till rice is cooked and water is fully absorbed.
  5. Meanwhile, as the rice is cooking, in a separate vessel,  heat the oil and fry the sliced onions till golden brown in color.
  6. Remove the onions and set aside.
  7. In the same oil fry the cabbage for 2 minutes. Remove and set aside.
  8. Then add the capsicum to the oil and fry for 1 minute.
  9. To the capsicum add the tomato, soya sauce, chilli powder and salt.
  10. Add the fried onions, cabbage and rice and mix well.
  11. Serve hot.
