Mixed Vegetable Soup
Ingredients
- 8 french beans
- 2 carrots
- 1 cup peas
- ¼ of a medium cabbage
- 1 potato
- 2 onion, chopped
- 12 mint leaves
- 1” pc. Ginger
- 2 tomatoes, chopped
- 1 tsp. pepper powder
- Salt to taste
- 1 tbsp. ghee
Method
- String the French beans, scrape carrots, peel potatoes, wash and cut all vegetables into small pieces.
- Boil in 8 cups of water with salt till almost done.
- In another vessel, heat the ghee, add the onions and fry till golden.
- Now add the boiled vegetables along with the stock, the mint leaves and pepper powder and cook till the vegetables are done and soft.
- This soup may be served with the vegetable pieces or mash the vegetables in the broth, strain and serve.
- Macaroni may be added if desired (which can be boiled along with the vegetables).
