Oatmeal and Raisin Cookies
Ingredients
- 1.5 cups flour
- 1.5 cups Oatmeal
- 1 tsp baking powder
- 1/3 tsp baking soda
- 1 tsp. salt
- 1 stick butter
- 1 cup brown sugar
- 1 large egg
- 1tsp. Vanilla
- 1 tbsp. milk
- ½ cup raisins (or as required)
Method
- Heat oven to 180 deg C.
- Line baking pans with parchment.
- Cream butter, sugar and salt.
- Add egg, vanilla, milk and mix well.
- In another bowl, sift flour, baking powder, baking soda and combine with oats.
- Add the dry ingredients to the creamed butter.
- Mix in the raisins lightly into the dough.
- Take a tablespoon or a teaspoon of dough, depending on the required size and form into balls, place on parchment 2” apart. Press the cookies down to flatten a bit with the back of a spooon or a glass. Bake till golden brown.
- Cool and store. Eat warm if desired.
