Oatmeal and Raisin Cookies

Ingredients

  • 1.5 cups flour
  • 1.5 cups Oatmeal
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • 1 tsp. salt
  • 1 stick butter
  • 1 cup brown sugar
  • 1 large egg
  • 1tsp. Vanilla
  • 1 tbsp. milk
  • ½ cup raisins (or as required)

Method

  1. Heat oven to 180 deg C. 
  2. Line baking pans with parchment.
  3. Cream butter, sugar and salt.
  4. Add egg, vanilla, milk and mix well. 
  5. In another bowl, sift flour, baking powder, baking soda and combine with oats. 
  6. Add the dry ingredients to the creamed butter. 
  7. Mix in the raisins lightly into the dough.
  8. Take a tablespoon or a teaspoon of dough, depending on the required size and form into balls, place on parchment 2” apart. Press the cookies down to flatten a bit with the back of a spooon or a glass. Bake till golden brown.
  9. Cool and store. Eat warm if desired.
