086 Pork (Manglorean)

Pork Bafad (Manglorean style)

Ingredients

  • 1 kg. pork
  • 4 bay leaves
  • Salt to taste

 Grind to a paste with vinegar

  • 1 cup vinegar or as required
  • 10 red chillies
  • 1 tsp. cumin seeds
  • 1 tsp. coriander seeds
  • ¼ tsp. mustard seeds
  • 8 pepper corns
  • 1 tsp. turmeric powder
  • 3” pc. cinnamon
  • 5 cloves
  • 2 cardamoms
  • Little tamarind (optional)

 Slice thinly

  • 3 big onions
  • 4 green chillies
  • 2” pc. ginger
  • 1 pod garlic

 Method

  1. Cut pork into cubes, wash well and drain.
  2. Add the ground masala to the pork alongwith the sliced ingredients, salt, bay leaves, remaining vinegar, a cup of water (if required).
  3. Mix well and cook till pork is tender.
