Pork Bafad (Manglorean style)
Ingredients
- 1 kg. pork
- 4 bay leaves
- Salt to taste
Grind to a paste with vinegar
- 1 cup vinegar or as required
- 10 red chillies
- 1 tsp. cumin seeds
- 1 tsp. coriander seeds
- ¼ tsp. mustard seeds
- 8 pepper corns
- 1 tsp. turmeric powder
- 3” pc. cinnamon
- 5 cloves
- 2 cardamoms
- Little tamarind (optional)
Slice thinly
- 3 big onions
- 4 green chillies
- 2” pc. ginger
- 1 pod garlic
Method
- Cut pork into cubes, wash well and drain.
- Add the ground masala to the pork alongwith the sliced ingredients, salt, bay leaves, remaining vinegar, a cup of water (if required).
- Mix well and cook till pork is tender.
