Pork Roast

Ingredients

  •  1 kg. pork
  • 1 tbsp. ginger paste
  • 1 tbsp. garlic paste
  • 1 tsp. pepper powder
  • ¼ tsp. turmeric powder
  • ¼ cup vinegar
  • Salt to taste
  • 2” pc. cinnamon
  • 6 cloves
  • 8 whole pepper corns
  • 4 cardamoms
  • 6 dry red chillies
  • 2 bay leaves
  • 1 tbsp. oil

Method

  1. Cut pork into 1” pieces  Wash and drain.
  2. Mix together the ginger/garlic paste, pepper powder, vinegar, salt and turmeric powder and apply to the pork pieces and marinate for 1 to 2 hours.
  3. Heat the oil in a thick bottomed vessel.  Break the red chillies into pieces and add to the hot oil.
  4. Add the peppercorns, cloves, cinnamon, cardamoms and bay leaves and stir for a minute.
  5. Add the pork alongwith the marinade and cook till done and all the water has dried up.
