Sabudana Vadas

Ingredients

  • 2 cups sago
  • 1 cup fried or roasted groundnuts
  • 2 potatoes, boiled, peeled and grated
  • 4 green chillies, minced
  • 1 small bunch coriander leaves
  • 2 tbsp. finely grated fresh or dessicated coconut
  • Few curry leaves sliced
  • 1 ½ tsp. cumin seeds
  • 1 tbsp. lemon juice
  • Salt to taste

Method

  1. Wash the sago and soak in water for 4 hrs. or overnight. Drain well and reserve.
  2. Powder the groundnuts coarsely and mix with the sago and the rest of the above ingredients.
  3. Form small round balls out of the mixture and deep fry on medium low flame till crisp and golden.
  4. You may make flat patties and shallow fry.
  5. Serve hot with Faral chutney (peanut-curd chutney) or coriander & mint chutney or any chutney of your choice.

Faral Chutney

  • ½ cup Peanuts, roasted and ground
  • 1 cup curd
  • 1 ½ tsp ginger‐green chilli paste
  • 1 tsp. cumin seeds
  • Salt to taste
  • Combine all ingredients and blend till smooth without adding water. Remove to a bowl, add a dash of lemon juice and mix. Serve with sago vadas.
