Sponge Cake
Ingredients
- 20 eggs
- 1 kg. maida
- 1 kg. butter (Amul)
- 1 kg. sugar
- 2 cups milk
- 2 tsp. vanilla essence
- 1 tbsp. lemon juice
- 1 tsp. baking powder
- 2 tbsp. sugar (for caramel)
Method
- Sift the maida with the baking powder and set aside.
- Beat the butter and sugar till light and creamy.
- Separate the egg yolks from the whites and add the yolks to the butter mixture.
- Beat the egg whites to a stiff froth. Add to the butter mixture alternately with maida.
- Prepare caramel with the sugar and lemon juice by placing in a pan on low flame and cook till the sugar turns brown.
- Cool and add to the cake mixture.
- Add milk and vanilla essence.
- Put into 2 large or 4 medium cake tins and bake in a moderately preheated oven till done.
- To test if the cake is done, insert a knife in the center of the cake and if it comes out clean the cake is ready.
