Sponge Cake

  •  20 eggs
  • 1 kg. maida
  • 1 kg. butter (Amul)
  • 1 kg. sugar
  • 2 cups milk
  • 2 tsp. vanilla essence
  • 1 tbsp. lemon juice
  • 1 tsp. baking powder
  • 2 tbsp. sugar (for caramel)


  1. Sift the maida with the baking powder and set aside.
  2. Beat the butter and sugar till light and creamy.
  3. Separate the egg yolks from the whites and add the yolks to the butter mixture.
  4. Beat the egg whites to a stiff froth.  Add to the butter mixture alternately with maida.
  5. Prepare caramel with the sugar and lemon juice by placing in a pan on low flame and cook till the sugar turns brown.
  6. Cool and add to the cake mixture.
  7. Add milk and vanilla essence.
  8. Put into 2 large or 4 medium cake tins and bake in a moderately preheated oven till done.
  9. To test if the cake is done, insert a knife in the center of the cake and if it comes out clean the cake is ready.
