Lemon Rice

​ Ingredients
​4 Cups Cooked basmati or any raw Rice
​ ¼ cup Peanuts

2 tbsp Cashewnuts

The Tadka (Tempering): 1 tsp Mustard seeds, ½ tsp Channa Dal, ¼ tsp Urad Dal
​4 Red Chillies, 2 Green Chillie (optional), 1″ piece Ginger (finely chopped) (optional), 2 sprigs Curry Leaves, ¼ tsp Hing
​1¼ tsp Turmeric Powder, Juice of 3 Lemons, Salt to taste
​To Serve: 6 Fried Pappadams & Fresh Coconut Chutney (if desired)

Heat oil in a pan and roast the peanuts and cashews until golden brown. In the same oil, splutter mustard seeds. Add channa dal, urad dal, red, hing, and curry leaves. Sauté until fragrant.
​Combine: Turn off the heat. Toss the rice, tadka, and roasted nuts, some crushed pappadams together until beautifully yellow and aromatic.
​Serve it immediately, crunchy and warm with crispy pappadams, with a creamy coconut chutney on the side, if desired
