Tuna and Braised Onion Salad
Ingredients
- 1 200 gm. Can Tuna or 4 tuna steaks
- 3 large onions, cut into thick rounds
- 2 tbsp. vinegar (red wine vinegar if available)
- 1 bunch (about 120g) rocket or spinach
- 1/2 bunch (about 325g) romaine lettuce, shredded
- 2 to 3 tbsp. olive oil or butter
- Heat oil/butter in a pan, add onions and cook covered, stirring occasionally, about 20 minutes till onions are soft and translucent and slightly browned.
- Add vinegar, simmer uncovered, 1 minute.
- Add tuna to same pan and cook uncovered until tuna is cooked as desired.
- If using canned tuna, break roughly into large chunks in the pan itself and cook till tuna is well heated through.
- Remove tuna from pan and cut into pieces.
- Mix warm tuna with braised onions, rocket/spinach and romaine lettuce and serve with crusty bread as a meal or simply as a salad.
