Veg Fried Rice
Ingredients
- 2 cups rice
- 1 bunch spring onions, chopped
- 1 green capsicum, chopped
- 1/2 each red and yellow capsicum (as desired), chopped
- 1 cup french beans, chopped
- 1 cup carrots chopped
- 4 cloves garlic, chopped
- 4 tbsp. soya sauce
- salt and pepper to taste.
- Parboil the rice, drain and leave to cool.
- Heat oil in a deep vessel or a wok and fry the garlic for 30 seconds.
- Add the spring onions (reserve some for garnish)
- Add the french beans and stir fry for 5 minutes.
- Then add the remaining vegetables and stir fry 5 mintues on high flame.
- Add a tablespoon of the soya sauce, salt and pepper powder and toss well.
- Add the rice in batches frying and mixing each batch well into the vegetables before adding the next batch.
- Lastly add the remaining soya sauce and mix well.
- Transfer vessel to a low flame, cover and leave to cook for 5 minutes.
- Serve the veg fried rice with soya and chillie sauce, garnished with spring onions.
