Veg Fried Rice

  • 2 cups rice
  • 1 bunch spring onions, chopped
  • 1 green capsicum, chopped
  • 1/2 each red and yellow capsicum (as desired), chopped
  • 1 cup french beans, chopped
  • 1 cup carrots chopped
  • 4 cloves garlic, chopped
  • 4 tbsp. soya sauce
  • salt and pepper to taste.
  1. Parboil the rice, drain and leave to cool.
  2. Heat oil in a deep vessel or a wok and fry the garlic for 30 seconds.
  3. Add the spring onions (reserve some for garnish)
  4. Add the french beans and stir fry for 5 minutes.
  5. Then add the remaining vegetables and stir fry 5 mintues on high flame.
  6. Add a tablespoon of the soya sauce, salt and pepper powder and toss well.
  7. Add the rice in batches frying and mixing each batch well into the vegetables before adding the next batch.
  8. Lastly add the remaining soya sauce and mix well.
  9. Transfer vessel to a low flame, cover and leave to cook for 5 minutes.
  10. Serve the veg fried rice with soya and chillie sauce, garnished with spring onions.
