Veg Manchurian
Ingredients
For the manchurian balls:
- 1 cup finely chopped carrots
- 1 cup finely chopped cabbage
- 1 cup finely chopped french beans
- 1 cup finely chopped capsicum
- 1 cup finely chopped onion
- 2 flakes garlic finely chopped
- 1/2 inch pc. ginger finely chopped
- 2 green chilles finely chopped
- salt and pepper to taste
- 2 to 4 tbsp. flour
- 2 tbsp. corn flour
- Oil for deep frying
- Mix all the above ingredients and form into small balls.
- Add very little water and make sure the mixture is dry enough to form the balls.
- Add more flour if the mixture turns out too wet and diffcult to form balls.
- Deep fry in hot oil in small batches till dark brown on all sides.
For the manchurian sauce:
- 1/2 cup sping onion
- 4 cloves finely chopped garlic
- 1 inch pc finely chopped ginger
- 2 finely chopped green chillies
- 2 tbsp. corn flour
- 2 to 3 stock cubes
- 4 cups water
- 3 tbsp. soya sauce
- 1 tbsp. tomato ketchup
- 1 tbsp. chilli garlic sauce (or chilli sauce)
- 1 tsp. vinegar
- 1 tsp. sugar (optional)
- salt to taste
- 2 tbsp. Oil
- Heat oil and fry the chopped ginger, garlic and chillies for 30 seconds.
- Add the sping onions (reserve a tbsp. for garnish) and cook till translucent.
- Add the stock cubes and water.
- Bring to a boil and simmer till the cubes have dissolved completely.
- Add the ketchup, chillie garlic sauce, soya sauce, salt if required and simmer for few minutes.
- Dissolve the corn flour in 1/2 cup water and add to the pot and cook till it thickens and become translucent.
- Add the manchurian balls, bring to a boil and simmer for a minute and remove from heat.
