Vermicelli Kheer

  • 1 Litre milk
  • 1/2 cup vermicelli
  • 1 tin (395 gms.) sweetened condensed milk
  • 1/4 cup Pistachios
  • 1/4 cup Almonds
  • 1/4 cup golden raisins
  • 1 tbsp. ghee
  • Salt to taste (optional)
  • 1 tsp. vanilla essence or 1/2 tsp cardamom powder


  1. Soak the pistachios and almonds in some hot water for 10 minutes. Blanch, slice and set aside.
  2. Heat Ghee and fry the raisins lightly till they swell. Remove and set aside.
  3. Add the vermicelli and fry for a minute or two.
  4. Add the milk and cook till mixture is fairly thick.
  5. Now add the condensed milk to the milk mixture and continue cooking stirring to prevent the mixture burning, till the kheer is thick.
  6. Add  the raisins and nuts and vanilla essence or cardamom powder.  Stir and take off heat.
  7. Serve warm or cold.
