Egg-Bhurji
Ingredients
- 6 eggs
- 2 large onions, chopped
- 2 tomatoes, chopped
- 3 green chillies, chopped
- ½ tsp. turmeric powder
- ½ bunch coriander leaves, chopped
- Salt to taste
- 2 tbsp. oil
Method
- Heat oil and add the onions and green chillies and fry till onions are soft and translucent.
- Add the salt and turmeric powder and mix well.
- Add tomatoes and fry till soft.
- Break eggs into the onion mixture and stir the eggs scrambling them well.
- Mix continuously to mash and scramble the eggs until cooked. Do not overcook.
- Garnish with coriander leaves.
