Egg-Bhurji

Ingredients

  • 6 eggs
  • 2 large onions, chopped
  • 2 tomatoes, chopped
  • 3 green chillies, chopped
  • ½ tsp. turmeric powder
  • ½ bunch coriander leaves, chopped
  • Salt to taste
  • 2 tbsp. oil

Method

  1. Heat oil and add the onions and green chillies and fry till onions are soft and translucent.
  2. Add the salt and turmeric powder and mix well.
  3. Add tomatoes and fry till soft.
  4. Break eggs into the onion mixture and stir the eggs scrambling them well.
  5. Mix continuously to mash and scramble the eggs until cooked.  Do not overcook.
  6. Garnish with coriander leaves.
