Homemade Paneer

Ingredients

1 Litre full fat milk

1/4 cup white vinegar

*To make Paneer : Bring 1 litre milk to a boil. Stir occasionally to prevent skin forming on the surfaace. Switch off flame and let cool for 10 minutes.  Pour ¼ cup vinegar in a steady stream all over the surface of the milk and keep stirring till the milk curdles and whey separates.  Will take about 3 minutes.  Strain the curdled milk in a muslin cloth.  Pour  2 to 3 cups of normal water to rinse the paneer.  Squeeze out all the water and use the paneer. 

To make block paneer, hang the muslin cloth for 1 hour for water to drain completely, then place under weight for 2 to 3 hours, wrapped in muslin.  The paneer can then be cut into cubes, slices or batons.
