Breakfast Pizza
Ingredients
- 6 slices bread
- 1 medium onion
- 1 medium tomato
- 2 small or 1 medium each coloured capsiums, red, yellow, green
- 2 large mushrooms
- 18 slices pepperoni
- 100 gms. shredded mozarella cheese or to taste
- 1/2 cup pizza sauce (tomato ketchup may be used as substitute)
- Tomato ketchup & Butter as required
- Salt & pepper to taste
- Roughly chop the onion, tomato, capsicum and slice the mushrooms. Sliced olives and a pinch or two of dried herbs of your choice may be added, as desired.
- Thoroughly mix with the salt, pepper, half the shredded mozarella cheese and the pizza sauce. Reserve the remaining cheese.
- While you ae assembling the pizza, light the oven on gas mark 180 deg C.
- Butter the bread slices and apply a thin layer of tomato ketchup and place in a baking tray.
- Top wth a thick layer of the vegetable cheese mixture and place three slices of pepperoni on each slice.
- Top with the remainng cheese.
- Bake in a hot oven for 20 minutes or till the cheese melts.
- Place under a hot grill for few minutes till light brown. (the ones below were a bit overdone under the grill! Need to be watched closely).
- Serve hot.
