Butter Cookies
(Melt in your mouth cookies)
Ingredients
- 1 cup flour
- 1/3 cups corn flour
- 2 1/2 tbs. custard powder
- 1 tsp. baking powder
- 160 gms. Butter softened, at room temperature
- ¼ cup Icing sugar
- ¼ tsp. vanilla extract
Method
- Sift first four ingredients together and set aside.
- In another bowl mix butter and icing sugar till pale and fluffy.
- Add vanilla, mix and add the dry ingredients.
- Beat to mix well.
- Knead the dough lightly till it comes together.
- Wrap in a plastic sheet and roll into 3.5 cm. thickness.
- Refrigerate for 30 minutes so it becomes workable.
- If the dough is still soft keep a while longer.
- Dough should be firm so it does not lose its shape while cutting.
- Meanwhile, heat oven to 180 deg C.
- Remove from refrigerator and cut into 1.5 cm thick slices.
- Place each slice 2″ apart on baking trays lined with parchment..
- Make criss-cross lines with a fork on top of the cookies or use sprinkles to create a design.
- Bake 15 mns or until lightly brown. Truly melt in your mouth…
