Butter Cookies

(Melt in your mouth cookies)


  • 1 cup flour
  • 1/3 cups corn flour
  • 2 1/2 tbs. custard powder
  • 1 tsp. baking powder
  • 160 gms. Butter softened, at room temperature
  • ¼ cup Icing sugar
  • ¼ tsp. vanilla extract


  1. Sift first four ingredients together and set aside.
  2. In another bowl mix butter and icing sugar till pale and fluffy. 
  3. Add vanilla, mix and add the dry ingredients. 
  4. Beat to mix well.
  5. Knead the dough lightly till it comes together. 
  6. Wrap in a plastic sheet and roll into 3.5 cm. thickness.
  7. Refrigerate for 30 minutes so it becomes workable.
  8. If the dough is still soft keep a while longer. 
  9. Dough should be firm so it does not lose its shape while cutting.
  10. Meanwhile, heat oven to 180 deg C.
  11. Remove from refrigerator and cut into 1.5 cm thick slices. 
  12. Place each slice 2″ apart on baking trays lined with parchment.. 
  13. Make criss-cross lines with a fork on top of the cookies or use sprinkles to create a design.
  14. Bake 15 mns or until lightly brown. Truly melt in your mouth…
