Ginger
Relieves flatulence and protects against cold
Ingredients
- ¼ kg. fresh ginger
- ¼ kg. onion
- 1 tsp. cumin seeds
- 1 cup coconut milk
- 1 cup jaggery
- 1 tbsp. pure ghee
Method
- Soak the ginger in water for one hour.
- Scrape the skin, clean, cut and grind to a fine paste.
- Add one cup water to the paste and set aside for three hours or ovenight in the refrigerator.
- Skim off the white scum, if any.
- Now grind the paste alongwith the onion and cumin seeds.
- Cook till thick.
- Add jaggery and stir till the jaggery is dissolved.
- Add coconut milk and cook for few minutes stirring all the time.
- Lastly add pure ghee and mix well.
- Bottle when cool.
Darker jaggery (as used below) will result in a darker colour.
