Ginger

Relieves flatulence and protects against cold

Ingredients

  • ¼ kg. fresh ginger
  • ¼ kg. onion
  • 1 tsp. cumin seeds
  • 1 cup coconut milk
  • 1 cup jaggery
  • 1 tbsp. pure ghee

Method

  1. Soak the ginger in water for one hour.
  2. Scrape the skin, clean, cut and grind to a fine paste.
  3. Add one cup water to the paste and set aside for three hours or ovenight in the refrigerator.
  4. Skim off the white scum, if any.
  5. Now grind the paste alongwith the onion and cumin seeds.
  6. Cook till thick.
  7. Add jaggery and stir till the jaggery is dissolved.
  8. Add coconut milk and cook for few minutes stirring all the time.
  9. Lastly add pure ghee and mix well.
  10. Bottle when cool.

Darker jaggery (as used below) will result in a darker colour.
