These pancakes were delicious. I used frozen blueberries as fresh are not easily available. The frozen blueberries were luscious and the fresh would taste even better! Any fruit may be substituted for blueberries.
Ingredients
2 cups whole wheat flour
2 tsps baking powder
1/2 half tsp soda bicarb
1/2 tsp salt
3/4 tsp ground cinnamon
1 cup plain yogurt
1 1/4 cup milk
1/4 cup maple syrup
2 eggs
1 tsp. vanilla extract
3 tbsp. coconut oil or melted butter
1 3/4 cup frozen or fresh blueberries
In a large bowl whisk all the dry ingredients until combined.
In another bowl whisk all the wet ingredients from yogurt to oil. Pour into dry ingredients and gently whisk to combine. The batter is thick n few lumps will remain.
Very very gently fold in the blueberries.
Heat a griddle over medium heat. coat with butter.
Once hot drop 1/4 cup batter on the griddle and cook until edges look dry and bubbles form-1 minute.
Serve hot with topping of your choice.
P.s.: Maple syrup may be substituted with honey or sugar, brown sugar if desired.
