Yakhni Pulao

As Farah Khan claims, any party at her home is incomplete without this dish, so I was eager to cook it and try her recipe myself.  Must say it is delicious and easy to cook and amazing comfort food!!

Ingredients

  • 1/2 kg mutton
  • 1/2 kg Basmati rice
  • 3 onions sliced
  • 3 large potates cut into large cubes
  • 250 gms yoghurt whipped
  • 3 tablespoon ginger garlic paste
  • 5-6 whole Kashmiri red chillies
  • 4-5 cardamoms
  • 2 inch cinnamon sticks
  • 6-7 cloves
  • 6-7 black pepper
  • 1 teaspoon chilli powder
  • Oil or ghee for frying
  • Salt to taste
  1. Marinate the meat in yoghurt and keep aside.
  2. Then fry the onions till golden brown in a vessel or cooker.
  3. Add ginger-garlic paste, whole spices.
  4. Fry for a few minutes and then add the potato pieces.
  5. Add the marinated meat and let it cook for about an hour or till meat is tender.
  6. Or till five whistles in a cooker. Take off the fire and let it cool till the cooker lid can be opened.
  7. Add the rice and cook for another three whistles.
  8. If using a vessel add the rice (after step 5) and 3 cups of hot water , stir well to mix and cook till water is absorbed and rice is done.
  9. Serve with Boondi raita,  Onion & tomato raita or Pineapple raita
